2008 Late Harvest Sauvignon Blanc

The 2008 vintage enjoyed a cool growing season that enabled the fruit to stay on the vines with a full canopy well into November.  The grapes for this dessert wine were affected by Botrytis in about 10% of the clusters; as a result, the grapes achieved a high level of sugar without too much dehydration, thereby creating a wine full of wonderful freshness.  The grapes were gently pressed to neutral oak barrels and subjected to a long and cool fermentation lasting over four months.  The result is a rich and complex after-dinner aperitif that delivers seductive aromas and flavors of peach, apricot, ginger and buttered toast, a very special treat when drizzled over vanilla bean ice cream or served with fresh fruits and full-flavored cheeses.  13.8% ABV DIR
