This blend of Corvina Veronese (70%), Rondinella (25%) and Sangiovese (5%) is a smooth full-bodied wine made in an innovative ripasso style.  After the harvest, the grapes from the Palazzo della Torre vineyard follow two different paths: The Corvina Veronese grapes are vinified immediately, while the remaining Rondinella and Sangiovese grapes are air dried until the end of December.  The fresh wine made at harvest is then blended with the fermenting juice of the dried grape, which initiates a second fermentation process and renders a more highly concentrated and complex wine.  The Allegrini people affectionately refer to Palazzo della Torre as their "baby Amarone."  Deep ruby in color, this wine is brimming with aromas and flavors of black cherries, blackberries, mocha and nutmeg with hints of dates, an ideal match with full-flavored pastas and risotto dishes, poultry and chorizo.  90 points Wine Advocate; 90 points Wine Enthusiast. 13.5% ABV TEG
