While this estate is located in a region known for producing fine Armagnac brandies, the Grassa family has been dedicated to growing "alternative" varietals and producing some of the freshest white wines to be found anywhere. Almost 20 years ago, Yves Grassa planted 60 acres of Chardonnay and Sauvignon Blanc in this southwestern appellation of France.
This 100% Chardonnay was grown in clay-limestone soils and boulbene topsoil with ochre-colored sand known as sables Fauves, To prevent oxidation, the grapes were taken from the vines to the vats in isothermal tanks protected by a layer of inert gas. The grapes were then loaded into one of eight 50-ton pneumatic temperature-controlled presses, followed by skin contact maceration for eight to 12 hours before being gently pressed and fermented in oak casts The final result is a fresh and smooth wine with apple flavors edged with grape-skin spice, ideal with grilled shrimp. 11.5% ABV TEG
