This bone-dry Cremant* has aromas of rich vanilla and poached pear and flavors of brioche, almond pastry cream, fragrant apricot and tart lime. Try pairing this bubbly with nut-encrusted fish, scallops on polenta, Asian dumplings or egg rolls, sushi, smoked salmon or, perhaps, a grilled cheese sandwich. * Cremant (pronounced "cray-mawn") designates sparkling wines made by the method champenoise but falling outside the boundaries of the Champagne region in France. By law, 30% of the blend called Cremant de Borgogne must come from Pinot Noir, Chardonnay, Pinot Gris or Pinot Blanc grapes, while the rest may come from lesser varietals, such as Aligote. Cremants are less bubby than Champagnes, more along the lines of gentle fizz rather than the nose-tingling experience of Champagne.
